Packed into the new recital centre in Melbourne were a star-studded audience to hear Neil Perry, Heston Blumenthal and Thomas Keller discuss “A new approach to cooking”. Sydney chef Tony Bilson was taking notes sitting next to the legendary Cheong Liew. I think I spotted Karen Martini and Martin Boetz. The audience was also packed full of a who’s who of local food media as well as few bloggers and quite possible a few more food twitters.

We were all given a copy of the manifesto for the new approach to cooking signed by Blumenthal (his signature looked like a flamboyant rendition of H BLT) and Keller.

This is a really rough recording and I haven’t the time tonight to transcribe it or edit it. But for the benefit of all of you who couldn’t make it today simply because it sold out, it was too expensive or you live in a swamp such as Elwood or another continent it is posted here. A new approach to cooking

He trained with IPC in London and has written for major international and national business and lifestyle titles. Establishing this blog in 2005, he was one of the first of a handful of food bloggers in Australia.
